A lovely rich and clear broth flavoured with a touch of anise and freshly dried wild lemongrass. The lemon grass was brought over from Malaysia from one of Grady’s protégés who came to visit.
Brew like tea or for larger amounts in a coffee press. Pour 200-250ml of boiled water over 25grams of consommé mix. Let sit for 1 minute and strain through a tea strainer into your cup.
Don’t brew for longer as the lemon grass may become bitter. Use the leftover pulp for hummus or as a component of any other dip.
